
Whether you have stored your RV for the year or whether you
plan to continue to enjoy it, odds are you can always use another good recipe
for the road. Reines RV is pleased to bring you this recipe for a campfire
chicken stew that the family will love. Cook it on the cooktop or on a campfire
for a hearty meal this fall.
Campfire Chicken Stew
For this recipe, you will need:
½ pound of bacon
One pound of boneless chicken
Four potatoes
Two carrots
One onion
1 can of stewed tomatoes
Two cubes of bouillon
Two cups of water
Two tablespoons of flour
(Two additional ingredients are optional; one tablespoon of
parsley and one bay leaf)
In the bottom of a Dutch oven, layer the bacon. This will
help prevent the chicken from burning and add some great smoky flavor. Next,
cut the chicken into one inch pieces. Then cut the onion, carrots along with
the potatoes into chunks. Put the meat and the vegetables in the pot. Pour in
the tomatoes and water. Add the seasonings except for the flour. Place the
Dutch oven on hot coals for about ½ hour to ¾ hour or until all of the
vegetables are done. If you don’t want to use a fire pit, cook on high on your
cook top for the same amount of time. To thicken the liquid, add the flour and
cook the stew for about 5 to 10 more minutes.
Serve with rolls and butter and this recipe will give you
four servings.
